ingredients:
- 1 onion (chopped)
- 2 red bell pepper (cubed)
- 1 zucchini (cubed)
- 2 eggplant (cubed)
- 1 cup diced tomatoes, packaged
- 1 garlic clove
- 1 bay leaf
- 1 egg
- 2 sausages
directions:
- sprinkle salt onto eggplant and let it sit for 10 minutes
- transfer onto paper towel and press to remove excess liquid and bitterness
- add garlic clove and olive oil onto pan and heat on low
- when garlic is slightly browned, add onion and bell peppers and add salt/pepper
- when onions are translucent, add eggplant and zucchini.
- lightly saute and season with salt/pepper again
- add diced tomatoes and bay leaf and gently press into veggies
- cover with lid and reduce heat to low and cook for 10 minutes
- test flavor and add salt/pepper to taste
- scoop a portion onto a gratin dish and add the egg and sausages
- put it into the oven at 390F until the top is browned
