ingredients:

  • 1 onion (chopped)
  • 2 red bell pepper (cubed)
  • 1 zucchini (cubed)
  • 2 eggplant (cubed)
  • 1 cup diced tomatoes, packaged
  • 1 garlic clove
  • 1 bay leaf
  • 1 egg
  • 2 sausages

directions:

  • sprinkle salt onto eggplant and let it sit for 10 minutes
  • transfer onto paper towel and press to remove excess liquid and bitterness
  • add garlic clove and olive oil onto pan and heat on low
  • when garlic is slightly browned, add onion and bell peppers and add salt/pepper
  • when onions are translucent, add eggplant and zucchini.
  • lightly saute and season with salt/pepper again
  • add diced tomatoes and bay leaf and gently press into veggies
  • cover with lid and reduce heat to low and cook for 10 minutes
  • test flavor and add salt/pepper to taste
  • scoop a portion onto a gratin dish and add the egg and sausages
  • put it into the oven at 390F until the top is browned
