ingredients:

  • large mac shells
  • 1/2 onion
  • 1 tbsp minced garlic
  • 1 cup raw cashews
  • 1.5 cups vegetable broth
  • 1 tbsp cornstarch
  • 1/2 tsp cumin
  • 3/4 tsp chili powder
  • 2 tbsp nutritional yeast
  • 4 oz can of green chilis

directions:

  • soak raw cashews overnight and drain
  • boil mac
  • saute onion and minced garlic until soft
  • add onions, garlic, cashews, 1/2 chilis, nutritional yeast, chili powder, cumin, cornstarch, and vegetable broth into blender
  • put sauce into a pot and cook until thickened
  • add pasta and remaining 1/2 of chilis
