    • Pretty much the perfect muffins in every way!
  • Blueberry crisp (recipe from the Passionate Vegetarian)
    • Really really good. A typical blueberry dessert...should have bought some vanilla ice cream to serve it with.
  • Breakfast burrito
    • Shredded potatoes, onions, green peppers, vegan "sausage," cheese (Mexican blend), pico de gallo, all in a tortilla
  • Cajun sweet potato fries (recipe from La Dolce Vegan)
    • They weren't very French fry-like, but still absolutely delicious. My sister and I pretty much made up our own spice blend and didn't follow instructions for the one in the cookbook.
  • Cinnamon walnut flax squares (recipe from La Dolce Vegan)
    • I substituted cinnamon extract for the maple the recipe called for, since apparently grocery stores in MA do not sell maple extract..either way, my family's new favorite dessert
  • Cinnamon-spiced roasted vegetables and couscous (recipe from La Dolce Vegan)
  • Couscous, black bean, and corn salad (online recipe)
    • Really delicious..perfect for summer, but I guess I couldn't wait.
  • Dark-chocolate covered strawberries and blueberries
    • ORGASMIC.
  • Dessert toast

  • Espresso brownies (x2) (from La Dolce Vegan)
    • Thickest, most flavorful brownies I have ever eaten. They are a bit more cake-like than brownie-like, but SO good. Eat with copious amounts of ice cream.
  • French fries (my own recipe)
    • Potatoes, olive oil, salt/pepper, dried parsley, garlic powder
    • They were very tasty but not fry-like at all. I honestly have no idea how to get potatoes crispy and fry-like in the oven without burning them..
  • Grilled shrimp, red and green peppers, white onion, and white mushrooms
    • I used olive oil, lemon and pepper seasoning, and sea salt. I think I may have overcooked the shrimp and undercooked the veggies but all-in-all it was good. A light summer dinner. Would be good with rice in the future.
  • Grilled vegetables and multigrain pasta
    • Green bell pepper, mushrooms, red onion, zucchini...vegetables are so much more flavorful when grilled, and I had enough left over to take for lunch the next day!
  • Lemony scallops and pasta (Weight Watcher's cookbook)
    • I need to learn how to cook scallops correctly. Other than that, this was delightful/a great summer dish. Scallops, spaghetti, lots of lemon juice/peel, carrots, and fresh spinach, a little red pepper...yum.
  • Macaroni 'n' cheese (Weight Watcher's cookbook)
    • Probably my biggest culinary failure to date...I shouldn't have used whole wheat pasta, I shouldn't have melted the cheese quite so much, and I should have used a smaller baking dish. Live and learn!
  • Mediterranean pasta (slightly modified from Weight Watchers cookbook recipe)
    • Dad said this was one of the best pasta dishes he's ever had
    • Salmon, multigrain pasta, roma tomato, white onion, black olives, ground basil, salt/pepper, parmesan

    • Very nice-looking. My sister did not add enough peanut butter to the dough, so...fail. But I'll make them again sometime.

  • Raspberry walnut pancakes (recipe from La Dolce Vegan)
    • Kind of an epic failure. I decided to double the recipe, which logically should have only meant there would be twice as many pancakes...but something went terribly wrong. Perhaps I should have used frozen raspberries instead of the $5 fresh organic raspberries I bought? Well, the pancakes did not cook evenly (the batter around each raspberry did not cook at all). Fail. I am also bad at making pancakes, so..
  • Ravioli with caramelized garlic, kale, red pepper, and cannellini beans
    • Quite good...should make the roasted garlic puree to go with it in the future.
  • Rice "a la hippie" (from my Crescent Dragonwagon book)
    • Also a very time consuming recipe..involves cutting 5 different vegetables and waiting an hour for brown rice to be done, but honestly? Worth it. And the recipe serves 8, so leftovers GALORE.
  • Roasted holiday vegetables (recipe from La Dolce Vegan)
  • Steel cut oats with kale and red peppers (recipe from a Hannaford magazine)
    • Definitely one of my biggest culinary triumphs to date. My family has requested I double the recipe in the future, because: "OH MY GOD THIS IS SO GOOD."
  • Stir-fry (modified from a recipe from the Flexitarian cookbook)
    • Brown rice, salmon, edamame, red pepper, sauce (soy sauce, pineapple juice, ground ginger, garlic powder, crushed red pepper flakes)
  • Three really good/easy sandwiches
    • Cucumber, red onion, sprouts, lettuce, cheddar cheese, Dijon mustard
    • Hummus, sprouts, red onion, cucumber
    • Melted cheddar cheese, tomato, lettuce, onion
  • Trail mix
    • LOVE. Dried apricots, dried cranberries, golden raisins, walnuts, sunflower seeds, dark chocolate chips.
