- Better Hash Browns
- Ingredients
- 1 large potato for every person eating
- 1/2 egg per person
- 1 tablespoon plain flour
- 1/2 rasher bacon per person
Recipe
- Dice up the bacon and cook it, remembering you're going to have to cook it again (so don't over-cook) then put the bacon on absorbant towels to get rid of as much oil as possible
- Grate up the potatoes, wash them out under water until the water runs clear, and press out all the water so they're as dry as possible, then place in a bowl
- Add the eggs, mix through, plain flour, mix through, then bacon. Add salt and pepper to taste
- In a fry-pan, add a good deal of oil and butter, so there's a thick swirl of it in the fry pan. Add the mixture in 1/2 cm thick patties. You can fill the entire pan up, but remember you're going to have to cook it on both sides, so I leave gaps so I can easily turn them over.
- I generally have so much to cook (even for just two people) that I have to do it all in two batches. I find that if you don't get the patties thin enough, the middle doesn't cook enough before you're burning the outside. Cook too slowly, and it just gets too oily.
- Cook until they're a deep dark golden colour.
