  • Bread & Butter Pudding (Serves 6-8)
    • Ingredients
      • 3 soft bread rolls
      • Soft butter
      • 1/2 cup sultanas
      • 1 and 3/4 cup (340ml) milk
      • 1 cup (250ml) cream
      • 1/3 cup castor sugar
      • 3 eegs
      • vanilla essence to taste
      • nutmeg and 1 tblspn castor sugar

Recipe

  • Preheat oven to 170c and grease a shallow ovenproof dish that has 6-8 cup capacity.
  • Slice rolls vertically into four slices each and butter one side of each
  • Place half on the bottom of the dish, buttered side up and sprinkle with half the sultanas.
  • Add second layer of buttered slices and top with remaining sultanas.
  • Heat 1 and 1/2 cups of the milk and cream in a saucepan on stove until tiny bubbles start to appear.
  • Whisk eggs, sugar, vanilla and the remaining milk (1/4) together.
  • Add hot milk and cream to the egg mixture a little at a time, stirring constantly.
  • Pour combined wet ingredients over dry and press bread down with a fork until most of the milk is absorbed (five minutes).
  • Sprinkle with sugar and nutmeg.
  • Place dish in a large oven dish that's filled with enough warm water to come halfway up the side of the pudding dish.
  • Bake for 35-40 minutes or until custard is set and top is light golden.
