- Pumpkin Soup (Serves Four)
- Ingredients
- 2 tbsp vegetable oil
- 1 large chopped onion
- 1 chopped carrot
- 1 chopped clove garlic
- 2 peeled and chopped medium-sized potatoes
- 750g peeled and chopped pumpkin
- 1.25 litres chicken or vegetable stock
- Sour cream to serve
Recipe
- Heat vegetable oil in a large saucepan over medium heat.
- Add onion, carrot, garlic and cook, stirring for 5 minutes or until the onion has softened.
- Add potatoes and pumpkin along with stock and bring to the boil.
- Cover and simmer for 25-30 minutes or until vegetables are tender.
- Allow to cool, then puree in batches.
- Gently reheat, season to taste with salt and pepper.
- Serve with sour cream and lots of crusty bread.
