  • Pumpkin Soup (Serves Four)
    • Ingredients
      • 2 tbsp vegetable oil
      • 1 large chopped onion
      • 1 chopped carrot
      • 1 chopped clove garlic
      • 2 peeled and chopped medium-sized potatoes
      • 750g peeled and chopped pumpkin
      • 1.25 litres chicken or vegetable stock
      • Sour cream to serve

Recipe

  • Heat vegetable oil in a large saucepan over medium heat.
  • Add onion, carrot, garlic and cook, stirring for 5 minutes or until the onion has softened.
  • Add potatoes and pumpkin along with stock and bring to the boil.
  • Cover and simmer for 25-30 minutes or until vegetables are tender.
  • Allow to cool, then puree in batches.
  • Gently reheat, season to taste with salt and pepper.
  • Serve with sour cream and lots of crusty bread.
