I used vanilla almond milk, but substitute for soymilk would work as well. The vanilla adds that sweet taste to the eggs.

  • beat eggs and add in vanilla almond milk
  • Cook eggs in lightly oiled pan
  • Salt and pepper to taste
  • Add in cheese of your choice (I used cheap american slices and ripped it to pieces first) and spinach leaves
  • After spinach wilts, serve!!

Eggs should be soft, sweet, and salty, with spinach taste and hearty with cheese.
