my very own apple pie: cook on med-high 4-5 fuji apples till liquid is absorbed with 1/4 cup raw sugar, brown sugar; 2 tsp vanilla extract, cardamon; 1 tsp ground nutmeg, cloves; 1 stick cinnamon. wrap in a sheet of shortcrust pastry lined generously with almond meal. pat raw sugar over top. brush with egg. bake for about 25 mins at 200 degrees with some thyme springs.
