Cake Mix:
- 2 1/4 cups flour
- 3 tsp baking powder
- 1 tsp baking soda
- 3 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp salt
- 1/2 cup apple sauce
- 1 cup vanilla almond milk
- 1 cup sugar
- 1/2 cup melted vegan butter
- 2 cups shredded carrots
Buttercream Icing:
- 3 cups icing sugar
- 1/4 cup vanilla almond milk
- 4 tbsp vegan butter
- handful of walnuts (optional)
Directions:
- Preheat oven to 350F.
- In a large bowl, combine dry ingredients. (flour, baking powder, baking soda, cinnamon, nutmeg, salt)
- Using a different bowl, combine remaining ingredients. (apple sauce, almond milk, sugar and melted butter.)
- Slowly add wet ingredients to dry, mixing as you go.
- Finally, add in your carrots. Mix & flip batter until fully combined.
- Place in a baking sheet, loaf pan, or two seperate cake sheets and bake for 35 mins. (or until baked completely through)
- Let cool. In the meantime, make buttercream glaze.
- Combine icing sugar, vegan butter (unmelted) & vanilla almond milk.
- Mix until desired consistency. (add more of any ingredient to change up texture of glaze)
- Pour over or spread onto cake.
- Add walnuts if desired!
