Cake Mix:

  • 2 1/4 cups flour
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp salt
  • 1/2 cup apple sauce
  • 1 cup vanilla almond milk
  • 1 cup sugar
  • 1/2 cup melted vegan butter
  • 2 cups shredded carrots

Buttercream Icing:

  • 3 cups icing sugar
  • 1/4 cup vanilla almond milk
  • 4 tbsp vegan butter
  • handful of walnuts (optional)

Directions:

  • Preheat oven to 350F.
  • In a large bowl, combine dry ingredients. (flour, baking powder, baking soda, cinnamon, nutmeg, salt)
  • Using a different bowl, combine remaining ingredients. (apple sauce, almond milk, sugar and melted butter.)
  • Slowly add wet ingredients to dry, mixing as you go.
  • Finally, add in your carrots. Mix & flip batter until fully combined.
  • Place in a baking sheet, loaf pan, or two seperate cake sheets and bake for 35 mins. (or until baked completely through)
  • Let cool. In the meantime, make buttercream glaze.
  • Combine icing sugar, vegan butter (unmelted) & vanilla almond milk.
  • Mix until desired consistency. (add more of any ingredient to change up texture of glaze)
  • Pour over or spread onto cake.
  • Add walnuts if desired!
