ingredients: one onion, olive oil, 2 cups of cherry tomatoes, half a red pepper, parmesan, fresh basil (makes around 4 servings)
- sautée chopped white onion in a little olive oil until they were soft and scoop them out into a bowl
- sautée the cherry tomatoes in more olive oil until soft and cooked through
- put the onions back in, turned the heat low and drizzled in maybe a teaspoon of balsamic vinegar, plus a handful of crushed red pepper
- cook on low for 5 minutes
- sprinkle on salt and black pepper and serve with a little extra olive oil, shredded Parmesan and fresh basil
