Ginger curry soup

  • 1 thumb chopped ginger
  • about 1/2 tbsp of curry powder
  • 2 tsp of honey or sugar
  • a dash of cinnamon
  • 3 cloves of garlic chopped
  • 3-4 carrots
  • a handful of cilantro
  • 1 tsp turmeric
  • dash of cumin
  • one can of lentils drained
  • half a onion
  • one diced tomato
  • some fresh basil

sautee all this stuff together for 10 minutes until it is mushy and looks orange and yellowish

blend it all, add in about one cup of chicken stock (or a bouillon cube mixed with water)

put back in pot and add in one can of coconut milk

then add either chicken, tofu or fish and cook until tender
