  • (1) 15oz can of blackbeans, drained and rinsed
  • 3/4c. granulated coconut sugar
  • 4 large eggs
  • 5T. melted butter
  • 1T. vanilla extract
  • 5T. Dutch-process cocoa
  • 1t. baking powder
  • .5t. baking soda

directions

  • Preheat oven to 350F°. Grease an 8-inch square cake pan.
  • In a high speed blender or food processor, puree the beans, sugar, oil, eggs, and vanilla until completely smooth. There will be flecks of brown at this point.
  • Add the cocoa powder, baking powder, and baking soda directly to the blender and blend until smooth.
  • Pour batter into prepared pan and bake for 28-35 minutes.
