Key lime tarts: Crust: 1 cup shredded unsweetened coconut 1 cup walnuts ½ cup pitted dates . Filling: 2½ firm avocados ¼ cup fresh lime juice 1 teaspoons lime zest ¼ cup raw honey Soak dates then process with walnuts and coconut, then spread at base of muffin tins. Blend filling and pour on top. Freeze!
Purple sweet potato bars: Purple Sweet Potato Bars Base: 1/2 cup walnuts 1/2 cup dates 2 Tbsp shredded coconut Pinch of salt . Top layer: 1 purple sweet potato (cooked and cooled) 1 Tbsp ground almonds 2+ Tbsp yogurt (or coconut cream) 1 Tbsp honey (optional) . Instructions: Blend all base ingredients together until sticky and press onto a plate. In a food processor, puree chunks of sweet potato until super creamy. Add almond meal and yogurt and blend again. At this point, taste and adjust. You may need to add more yogurt and honey, just stir in a bit at a time until it's perfect for you. Spread evenly across base layer and chill 2-3 hours.
