- less cheese than you think you need--3 oz is good 
- grate the gruyere fine and mix it in as you fold the egg whites 
- 30 minutes at 400 F, convection if available
      
        - or 15 min at 400 then 20 min at 350 
 
- no collar 
- run a knife around the inside of the dish 
- it doesn't just need to be a bechamel, it can be 11 oz of any substrate, add a little roux if it's wet
