Ingredients:

  • beef stew meat (about a pound)
  • 2 cups water
  • 1/2 small onion, finely chopped
  • beef bouillon cube
  • 1/2 tsp black pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp ginger
  • 1 Tbsp apple cider vinegar
  • 1 tsp lime juice

Directions:

  • Combine all ingredients in pot. Bring to a boil and simmer on low for 60-90 minutes until soft. Shred beef with forks and continue cooking 30 minutes. Serve on tortillas with guacamole.
