• 4 cups dandelion blossoms
  • 2 tbsp lemon juice
  • 1 pkg powdered pectin
  • 5.5 cups sugar

  • rinse dandelions in cold water
    • green bits add bitterness; remove according to preference
  • boil petals in 8 cups of water for 3 minutes
  • cool and strain thru fine mesh sieve
  • measure 3 cups of dandelion liquid and place in lg stainless steel saucepan
  • add lemon juice and pectin
    • OR for syrup instead of jelly: just half the pectin for a good thickness
  • bring to a boil
  • add sugar, stir to mix well
  • continue stirring, boil for 2.5 minutes
