- 4 cups dandelion blossoms
- 2 tbsp lemon juice
- 1 pkg powdered pectin
- 5.5 cups sugar

- rinse dandelions in cold water
- green bits add bitterness; remove according to preference
- boil petals in 8 cups of water for 3 minutes
- cool and strain thru fine mesh sieve
- measure 3 cups of dandelion liquid and place in lg stainless steel saucepan
- add lemon juice and pectin
- OR for syrup instead of jelly: just half the pectin for a good thickness
- bring to a boil
- add sugar, stir to mix well
- continue stirring, boil for 2.5 minutes
