• 6 large sandwich loaf slices
    • 150g smoked tofu
    • 70g sugar free soy yogurt
    • 1 tbsp eggless mayo
    • 1 tbsp lemon juice
    • 1/2 tbsp chives
    • salt
    • pepper
  • if the loaf has the crust, remove it, slighty thin them with a rolling pin
  • toss the tofu in a mixer or blender with the soy yogurt, eggless mayo, the lemon juice some salt and pepper, blend until you get a smooth cream, then add the chopped chives
  • spread the tofu cream on the bread and smooth with a spatula, roll the bread (like you would do like a cinnamon roll) and let it wait in the fridge to set
  • for a better result, wait until the day after, but if you want to eat right away, a pair of hours can work
  • for presentation, portion the bread cutting rolls out of the bread
  • i like them with some fruit, kiwi slices, apple, berries etc...
