- 1 cup full fat coconut milk
- ½ cup sugar
- combine the two in a saucepan over medium heat
- bring it to a simmer and cook, stirring occasionally, for 30–40 minutes until it reduces and thickens
- once thickened, remove from heat and let it cool before using in recipes
- ↣ store it in an airtight container in the fridge for up to 1 week
