• 1 cup full fat coconut milk
  • ½ cup sugar
    • combine the two in a saucepan over medium heat
    • bring it to a simmer and cook, stirring occasionally, for 30–40 minutes until it reduces and thickens
    • once thickened, remove from heat and let it cool before using in recipes
  • store it in an airtight container in the fridge for up to 1 week
