- 3 tbsp of aquafaba (chickpea water)
- OR unsweetened plant based milk
- 1/2 juice from a lemon
- 1 tsp of vinegar (rice, white, acv...)
- 1/2 tsp ground mustard
- 1 tsp sugar (white, cane...)
- 1/4 tsp black salt
- 3/4 cup canola oil (180ml)
- ▸ in a mixer: combine all ingredients EXCEPT for the oil
- blend blend blend until combined
- while blending, slowly add the oil in a thin, steady stream until completely incorporated (the mixture will thicken quickly within a few minutes)
- transfer to clean jar and store in the fridge for up to 2 weeks
