- 70g oat flour
- 40g flour
- 30g shredded coconut
- 15g vanilla protein powder
- 2 tsp baking powder
- 150g frozen blueberries
- 1/4 cup applesauce
- 60ml sweetener
- 60ml soy milk
- muffin tins
- preheat the oven at 170° and prepare the muffin tins, you can use aluminum or paper or silicone
- mix the dry ingredients and the wet separately, add the blueberries to the dry and mix to coat them in flour, then mix the two bowls
- scoop the batter in the muffin tins, and bake them in the oven for 18-20 minutes
- after cooking, let them rest untouched for 10 minutes
