• ingredients
    • 70g ground oats / oat flour
    • 30g chickpea flour
    • 10g vanilla protein powder
    • 2 tsp baking powder
    • a pinch of salt
    • 1 banana
    • 170g soy milk (almond works too)
    • 1 tbsp syrup
    • 1/2 tsp vanilla extract
  • method
    • in a blender: pour the banana, soy milk, syrup and extract - mix to combine
    • then add: ground oats, chickpea flour, protein powder, baking powder and salt - mix until just combined, let it sit for 10 minutes
    • cook the pancakes in a pan (or if you are lazy like me, use a waffle machine)
  • tip cook on low heat, otherwise it could be gummy
