- 3/4 cup brown rice
- 1 + 3/4 cups canned jackfruit
- 1 clove of garlic
- 1 + 1/2 tbsp tamari
- 1 tsp coconut sugar
- 1/4 tsp chili flakes
- 1 tsp sesame oil
- 1 diced cucumber
- 2 grated carrots
- 1/2 cup kimchi
- 1 tbsp sesame seeds
- 1 stalk diced green onion
- method
- cook the rice first, drain and let it cool down
- in a pan add the jackfruit, garlic, tamari, coconut sugar, chili and cook until the jackfruit is softened (15 mins c.a.) once done add the sesame oil and remove from heat
- plate the rice with cucumber, kimchi, carrots, jackfruit and top with sesame seeds
