• ingredients
    • 1 eggplant
      • cut into 4 thick slices
    • 4 mushroom heads
    • 1 sweet potato
      • white, orange or purple - split in 8 slices
    • 8 cherry tomatoes
    • 1 thumb of ginger
    • 12 olives - pits removed
    • vermut dry
    • oil
    • salt
    • pepper
  • method
    • rinse the eggplant and cover with some salt to prevent bitterness
    • cut the mushroom heads in thin slices
    • cut in half the tomatoes
    • peel and finely chop the ginger
    • on a oven tray folded with aluminum foil place the eggplant slices, mushrooms, sweet potato and olives - sprinkle over some oil, vermut dry, a dash of salt, pepper and ginger
    • close the aluminum foil and cook in the oven for 10' at 180°
  • eat with some spaghetti aglio olio e peperoncino... yum yum...
