- 1 eggplant
- ↳ cut into 4 thick slices
- 4 mushroom heads
- 1 sweet potato
- ↳ white, orange or purple - split in 8 slices
- 8 cherry tomatoes
- 1 thumb of ginger
- 12 olives - pits removed
- vermut dry
- oil
- salt
- pepper
- method
- rinse the eggplant and cover with some salt to prevent bitterness
- cut the mushroom heads in thin slices
- cut in half the tomatoes
- peel and finely chop the ginger
- on a oven tray folded with aluminum foil place the eggplant slices, mushrooms, sweet potato and olives - sprinkle over some oil, vermut dry, a dash of salt, pepper and ginger
- close the aluminum foil and cook in the oven for 10' at 180°
- ↝ eat with some spaghetti aglio olio e peperoncino... yum yum...
