• an introduction to: dahl
    • 1/2 cup red onion
    • 1 tbsp ginger
    • 2 tbsp curry powder- your favorite blend
    • 3/4 cup red lentils - soaked & rinsed
    • 1 + 1/4 cup veggie broth
    • 1/2 cup coconut milk
    • 2 tbsp lime juice
    • cilantro if you like
  • method
    • cook the finely chopped red onion in a tall pot with the garlic & ginger with a bit of water or oil - don't burn it
    • when the onion is traslucent, add the spices, and let them bloom - if you want add some chili powder for heat
    • stir in the lentils, veggie broth, coconut milk and bring to a boil
    • let the lentils absorb the broth and milk, simmering for 25-30' - until tender
    • remove from the heat, add lime juice and cilantro if you like
  • it's warm and hearty, nice on a cool day!
