- an introduction to: dahl
- 1/2 cup red onion
- 1 tbsp ginger
- 2 tbsp curry powder- your favorite blend
- 3/4 cup red lentils - soaked & rinsed
- 1 + 1/4 cup veggie broth
- 1/2 cup coconut milk
- 2 tbsp lime juice
- cilantro if you like
- method
- cook the finely chopped red onion in a tall pot with the garlic & ginger with a bit of water or oil - don't burn it
- when the onion is traslucent, add the spices, and let them bloom - if you want add some chili powder for heat
- stir in the lentils, veggie broth, coconut milk and bring to a boil
- let the lentils absorb the broth and milk, simmering for 25-30' - until tender
- remove from the heat, add lime juice and cilantro if you like
- ↪ it's warm and hearty, nice on a cool day!
