- 1 onion, chopped
- 2 leeks, chopped
- 2 carrots, peeled and chopped
- 1 tsp ground coriander
- salt
- pepper
- 2 cups veggie stock
- large handful fresh coriander, reserve some for garnish
- method
- fry the onion in some oil on a medium heat - once browned add the leeks and carrots, season with ground coriander, salt and pepper
- continue to cook uncovered for 10' before adding the veggie stock - cover and let it simmer for 20'
- stir in fresh coriander and transfer to a blender / food processor - blend until smooth
- ↪ serve hot with remaining fresh coriander and if you wish, add some grain and some leafy greens like spinach...
