• ingredients
    • 1 onion, chopped
    • 2 leeks, chopped
    • 2 carrots, peeled and chopped
    • 1 tsp ground coriander
    • salt
    • pepper
    • 2 cups veggie stock
    • large handful fresh coriander, reserve some for garnish
  • method
    • fry the onion in some oil on a medium heat - once browned add the leeks and carrots, season with ground coriander, salt and pepper
    • continue to cook uncovered for 10' before adding the veggie stock - cover and let it simmer for 20'
    • stir in fresh coriander and transfer to a blender / food processor - blend until smooth
  • serve hot with remaining fresh coriander and if you wish, add some grain and some leafy greens like spinach...
