    • 1 cup soy milk, unsweetened, unflavoured
    • 1 tbsp thyme
    • 1 tsp oregano
    • 1/2 cup baby spinach
    • 1/2 cup basil
    • 2 cups veggie broth
    • 2 sweet onions
    • 4 garlic cloves
    • 7 italian tomatoes
    • pepper
    • salt
  • method
    • dice the onion and coat them and the tomatoes with some oil, salt and pepper
    • place both onion and tomatoes on a tray and bake in a pre-heated oven at 200° for 40'
    • in the meantime simmer the broth with the herbs
    • when the veggies are well roasted, add them to the broth with the soy milk
    • using an immersion blender smooth the soup until creamy
    • at this time, add some chopped spinach so it wilts while preparing for serving
  • it could be served with a piece of toasted bread and some crispy beans
