- 1 cup soy milk, unsweetened, unflavoured
- 1 tbsp thyme
- 1 tsp oregano
- 1/2 cup baby spinach
- 1/2 cup basil
- 2 cups veggie broth
- 2 sweet onions
- 4 garlic cloves
- 7 italian tomatoes
- pepper
- salt
- method
- dice the onion and coat them and the tomatoes with some oil, salt and pepper
- place both onion and tomatoes on a tray and bake in a pre-heated oven at 200° for 40'
- in the meantime simmer the broth with the herbs
- when the veggies are well roasted, add them to the broth with the soy milk
- using an immersion blender smooth the soup until creamy
- at this time, add some chopped spinach so it wilts while preparing for serving
- ↝ it could be served with a piece of toasted bread and some crispy beans
