- ingredients
- 4 large roma tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 green bell pepper
- 1/2 red onion
- 2 tbsp balsamic vinegar
- 1 thick slice of bread, soaked, crusts removed
- 1 tsp olive oil
- salt
- pepper
- method
- toss all ingredients together in a blender and puree until it achieve a soup-like consistency
- store in a bowl in the fridge for at least a couple of hours
- enjoy chilled!
- ↪ for a complete meal for the kids i serve it with a side of crispy chickpeas - using the air fryer so it won't be exhausting using a regular oven and let them cool before serving ^^
