• ingredients
    • 4 large roma tomatoes
    • 1 cucumber
    • 1 red bell pepper
    • 1 green bell pepper
    • 1/2 red onion
    • 2 tbsp balsamic vinegar
    • 1 thick slice of bread, soaked, crusts removed
    • 1 tsp olive oil
    • salt
    • pepper
  • method
    • toss all ingredients together in a blender and puree until it achieve a soup-like consistency
    • store in a bowl in the fridge for at least a couple of hours
    • enjoy chilled!
  • for a complete meal for the kids i serve it with a side of crispy chickpeas - using the air fryer so it won't be exhausting using a regular oven and let them cool before serving ^^
