- what you need:
- 2 stalks of lemongrass, minced
- 4 small potatoes, diced
- 3 carrots, diced
- 1 pack shiitake mushrooms
- 1 cup frozen peas
- 2 tbsp red curry paste
- 2 cloves garlic, minced
- 1/2 red onion, finely diced
- 1 tbsp fresh ginger, minced
- 1/2 tsp turmeric
- 1 can full fat coconut milk
- 1 cup vegetable broth or water
- how to soup:
- cook first in pot the onion, garlic, ginger, turmeric, lemongrass and curry paste until fragrant
- add the broth and coconut milk, let it simmer for 45'
- strain the broth and keep the liquid infused
- reheat the broth and add the potatoes, carrots, shiitake and peas, and cook them until the veggies are fully cooked
- ↝ lemongrass is good, but if you aren't familiar, just start with one stalk first
