• what you need:
    • 2 stalks of lemongrass, minced
    • 4 small potatoes, diced
    • 3 carrots, diced
    • 1 pack shiitake mushrooms
    • 1 cup frozen peas
    • 2 tbsp red curry paste
    • 2 cloves garlic, minced
    • 1/2 red onion, finely diced
    • 1 tbsp fresh ginger, minced
    • 1/2 tsp turmeric
    • 1 can full fat coconut milk
    • 1 cup vegetable broth or water
  • how to soup:
    • cook first in pot the onion, garlic, ginger, turmeric, lemongrass and curry paste until fragrant
    • add the broth and coconut milk, let it simmer for 45'
    • strain the broth and keep the liquid infused
    • reheat the broth and add the potatoes, carrots, shiitake and peas, and cook them until the veggies are fully cooked
  • lemongrass is good, but if you aren't familiar, just start with one stalk first
