    • 1/2 cup finely chopped red onion
    • 1 tsp turmeric
    • 1 tbsp garam masala
    • 4 cloves of garlic
    • 4 cups kale leaves
    • 1 cup dry red lentils
    • 3 cups diced tomatoes
    • 4 cups veggie broth
    • 1 cup coconut milk
  • method
    • in a tall pan brown the onion in a bit of oil first, then add garlic, turmeric, garam masala and let the spices bloom
    • add the broth and lentils, waits until they are semi-cooked
    • add coconut milk, tomatoes and kale and let the lentils finish their cooking
  • you can top the soup with some roasted almonds and some soy or coconut yogurt, but be sure it's unsweetened and unflavoured
