- 1/2 cup finely chopped red onion
- 1 tsp turmeric
- 1 tbsp garam masala
- 4 cloves of garlic
- 4 cups kale leaves
- 1 cup dry red lentils
- 3 cups diced tomatoes
- 4 cups veggie broth
- 1 cup coconut milk
- method
- in a tall pan brown the onion in a bit of oil first, then add garlic, turmeric, garam masala and let the spices bloom
- add the broth and lentils, waits until they are semi-cooked
- add coconut milk, tomatoes and kale and let the lentils finish their cooking
- ↝ you can top the soup with some roasted almonds and some soy or coconut yogurt, but be sure it's unsweetened and unflavoured
