    • 1/2 yellow onion
    • 1 garlic clove
    • 1 tbsp grated ginger
    • 1/2 tsp cumin
    • 1/2 tsp cinnamon
    • 1/2 tsp turmeric
    • 2 tbsp water
    • 2 tbsp peanut butter
    • 1 cup veggie broth
    • 1/2 cup coconut milk
    • 1 sliced red bell pepper
    • 1 sliced zucchini
    • 1 sliced carrot
    • 2 cups cooked chickpeas
    • 1/2 lime, juiced
  • method
    • heat in a pot some of oil and cook the onion, garlic, carrot and all the listed spices
    • add the veggies first, letting them brown a little before adding chickpeas, broth and coconut milk
    • thin the peanut butter in some of the broth and add it in the pot
    • simmer until the veggies are tender
    • before serving, stir in some lime juice!
  • for a complete meal you can add some cooked rice as a side, maybe mixed with some quinoa if it's local! ☺
