- ingredients
- 1/2 yellow onion
- 1 garlic clove
- 1 tbsp grated ginger
- 1/2 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- 2 tbsp water
- 2 tbsp peanut butter
- 1 cup veggie broth
- 1/2 cup coconut milk
- 1 sliced red bell pepper
- 1 sliced zucchini
- 1 sliced carrot
- 2 cups cooked chickpeas
- 1/2 lime, juiced
- method
- heat in a pot some of oil and cook the onion, garlic, carrot and all the listed spices
- add the veggies first, letting them brown a little before adding chickpeas, broth and coconut milk
- thin the peanut butter in some of the broth and add it in the pot
- simmer until the veggies are tender
- before serving, stir in some lime juice!
- ↪ for a complete meal you can add some cooked rice as a side, maybe mixed with some quinoa if it's local! ☺
