- 500 g potatoes
- 200 ml soy cream - or almond, oat, coconut...
- 12 mushroom heads
- 2 big porcini heads
- oil
- paprika
- salt
- method
- peel and chop the potatoes, cook them in boiling water until tender
- drain the potatoes and mix them with dairy free cream until reaching a smooth consistency, add some salt and paprika for taste - if it's too dense, use a little bit of cooking water
- in a non stick pan heat some oil, and toss the mushrooms for 2'
- later add the porcini heads and cook them ultil tender
- divide the soup in different plates and top them with the cooked mushrooms
- ➜ ratte potatoes are ideal, but if you only have available your local potatoes, add in 4 cooked chestnuts for a deeper flavour!
