    • 500 g potatoes
    • 200 ml soy cream - or almond, oat, coconut...
    • 12 mushroom heads
    • 2 big porcini heads
    • oil
    • paprika
    • salt
  • method
    • peel and chop the potatoes, cook them in boiling water until tender
    • drain the potatoes and mix them with dairy free cream until reaching a smooth consistency, add some salt and paprika for taste - if it's too dense, use a little bit of cooking water
    • in a non stick pan heat some oil, and toss the mushrooms for 2'
    • later add the porcini heads and cook them ultil tender
    • divide the soup in different plates and top them with the cooked mushrooms
  • ratte potatoes are ideal, but if you only have available your local potatoes, add in 4 cooked chestnuts for a deeper flavour!
