- 700g green beans
- 200g tomatoes, cut in half
- 50g plums, cut in quarters - prugna agostana
- 1 tbsp pumpkin seeds
- dairy free butter
- 2 cloves of garlic
- honey vinaigrette
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 tbsp honey
- 1 tbsp minced red onion
- salt
- black pepper
- method
- boil the green beans for 10' until tender
- fry the garlic in some butter, add the green beans to get flavours
- toss in the quartered plums so they will caramelise and sweeten the beans
- season with salt and pepper
- add tomatoes and pumpkin seeds
- add the dressing to season, enjoy!
- ↪ to achieve a complete meal, just include some cooked legumes or tofu
