6 cups of veggie broth, a can of coconut milk, thyme, garlic, olive oil, cup of bowtie or whatever pasta, 2 cans of chickpeas, a cup of peas (frozen), a cup of carrots (frozen), can of corn, yellow onion, whatever other veggies, some nooch

  • sauté onion in oil & garlic
  • add broth and corn
  • bring to boil
  • add pasta
  • once pasta is cooked, add everything else
  • simmer for 5 minutes
  • turn off heat and let sit for 10 minutes
