• pumpkin (any kind, peeled + cubed)
    • cooked white beans (cannellini / navy / butter beans)

    • lemon juice
    • tahini

  • 1. toss the pumpkin cubes with olive oil, salt, and spices 2. roast at 200°c until soft and lightly caramelized 3. let it cool 4. in a blender: add roasted pumpkin, white beans, tahini, lemon juice, garlic, and a splash of water or olive oil 5. blend until creamy and smooth — adjust salt and acidity 6. that’s it ☻
