congee (in chinese cooking) broth or porridge made from rice; aka savory rice porridge. this is a cheat recipe where i swap rice with oats just because i crave something quick.

    • 1 cup rolled oats
    • knobs of ginger
    • dried mushrooms
    • chopped scallions
    • sesame oil
  • 1. soak dried mushrooms in 3 cups of water {keep the liquid} 2. throw oats, ginger, scallion whites, mushroom water into a pot 3. cook until oats break down into a thick porridge {add water if needed} 4. sauté mushrooms, finish with sesame oil and season with salt or whatever you fancy 5. that’s it! ☻
