- i was looking for lunch inspiration and stumbled upon this → video
- the recipe i attempted to recreate is called “one pot kfc rice”, but since i’m vegan and don’t eat fried chicken, here’s my version:
⠀ ⠀ i eyeballed everything because no measurements were given
⠀ ⠀ ⠀ ingredients
- short-grain rice
- mushroom + marmite broth
- vegan butter
- ketchup
- soy sauce
- vegan chicken nuggets (i used these from unconventional)
⠀ ⠀ ⠀ ⠀ ⠀⠀ ⠀ spice mix (kfc-ish, allegedly)
- i took inspiration from mary’s test kitchen, who recreated kfc spices in one of her recipes. i only used what i had:
- nutritional yeast
- paprika
- black pepper
- white pepper
- mustard (i used the sauce one)
- garlic
- thyme
- oregano
- ground ginger

- 1. air-fry the nuggets following package instructions 2. whisk all the spices into the broth first, then add everything to the rice — this helps distribute the flavors evenly 3. rinse the rice and add it to your rice cooker; pour in soy sauce, ketchup, and the broth 4. remove the coating from ONE side of each nugget and place them on top of the uncooked rice, with the exposed side touching the liquid 5. meanwhile, crisp up the nugget coating in the oven or air fryer 6. once the rice is cooked, add vegan butter and stir well, breaking up the nugget “pulp” into the rice 7. plate and finish with the crispy coating on top.
